Description

Ingredients

1 tablespoon olive oil

1 pound ground beef (85% lean)

2 medium sweet potatoes, peeled and diced

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent, about 3 minutes.

2. Stir in the minced garlic and cook for another 30 seconds until fragrant.

3. Add the ground beef, breaking it up with a spatula. Cook until browned, about 6–8 minutes. Drain excess fat if needed.

4. Season with smoked paprika, cumin, salt, and black pepper. Mix well.

5. Add the diced sweet potatoes and stir to combine. Cover and cook on medium-low for 10–12 minutes, stirring occasionally.

6. Once sweet potatoes are fork-tender, uncover and cook for another 2–3 minutes to lightly caramelize.

7. Sprinkle with chopped fresh parsley, if using, and serve hot.

Notes

To keep sweet potatoes from sticking, stir occasionally while covered.

For a leaner option, swap ground beef with ground turkey or chicken.
