Ingredients
1 pound ground beef
1 small onion, chopped
2 cloves garlic, minced
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 cup frozen peas and carrots
2 sheets puff pastry, thawed
1 egg yolk
1 tablespoon water
Instructions
1. In a large skillet over medium heat, cook ground beef until browned and no longer pink. Drain excess grease.
2. Add chopped onion and garlic. Sauté until fragrant and softened.
3. Stir in tomato paste and Worcestershire sauce. Cook for 1 minute.
4. Add frozen peas and carrots. Cook for 5 minutes. Remove from heat and let mixture cool slightly.
5. Roll out puff pastry sheets on a floured surface. Cut each sheet into even rectangles.
6. Spoon beef filling onto half of each rectangle, leaving space at the edges.
7. Fold over the dough to form a pocket. Press edges with a fork to seal.
8. Place on a lined baking sheet.
9. Mix egg yolk with water and brush over each pie.
10. Bake at 400°F (200°C) for 20–25 minutes or until golden and puffed.
Notes
Be sure the filling has cooled before placing it on the puff pastry to avoid soggy dough.
You can freeze unbaked hand pies and bake directly from frozen—just add 5–7 extra minutes to baking time.
