Ingredients
2 medium sweet potatoes, peeled and 3/4-inch diced (about 1 1/2 lb)
2 tablespoons olive oil, divided
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 pound lean ground beef (90%)
1 1/2 teaspoons ground cumin
1 teaspoon smoked paprika
1 teaspoon chili powder
3/4 teaspoon fine sea salt, divided
1/2 teaspoon black pepper
2 cups baby spinach, packed
1 cup cherry tomatoes, halved
1 large avocado, diced
1/2 cup plain Greek yogurt
1 tablespoon fresh lime juice
1 small garlic clove, grated
1/4 teaspoon fine sea salt
2 tablespoons water, as needed to thin
Instructions
1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tablespoon olive oil, 1/4 teaspoon salt, and a pinch of pepper. Roast 25-30 minutes, flipping once, until caramelized.
2. Heat remaining 1 tablespoon olive oil in a skillet over medium. Sauté onion 3 minutes; add garlic 30 seconds.
3. Add ground beef; cook and crumble until browned, 7-9 minutes. Stir in cumin, smoked paprika, chili powder, remaining salt, and pepper.
4. Stir spinach into the hot beef to wilt, 30-60 seconds.
5. Whisk Greek yogurt, lime juice, grated garlic, and salt; thin with water.
6. Assemble bowls with sweet potatoes, beef/spinach, tomatoes, and avocado. Drizzle with sauce and serve.
Notes
For meal prep, store hot and fresh components separately; assemble after reheating.
