Ingredients

1 (30 oz) bag frozen shredded hashbrowns, thawed

1 ½ cups cooked and crumbled bacon or breakfast sausage

1 ½ cups shredded cheddar cheese

½ cup diced red bell pepper (optional)

¼ cup chopped green onions or parsley (garnish)

8 large eggs

1 ½ cups whole milk

1 tsp salt

½ tsp black pepper

½ tsp garlic powder

Nonstick cooking spray or butter


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Layer hashbrowns evenly in the dish and press down lightly.
  3. Add cooked bacon or sausage, diced red pepper, and sprinkle cheddar cheese over the top.
