8 large eggs

1 cup cottage cheese

1 medium zucchini, diced

2 cups fresh spinach, roughly chopped

3/4 cup frozen peas

3 green onions, sliced

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 375°F and lightly grease an 8×8-inch baking dish.

2. Heat the olive oil in a skillet over medium heat. Add the diced zucchini and cook for 3 to 4 minutes until slightly softened.

3. Add the spinach to the skillet and cook for 1 to 2 minutes until wilted. Remove from the heat.
