Ingredients
For the Chicken Meatballs:
1 lb ground chicken
1 small red onion, finely chopped
2 cloves garlic, minced
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
1 tsp dried oregano
1/2 tsp paprika
Salt and pepper to taste
1/4 cup breadcrumbs (optional)
1 egg
For the Bowl:
2 cups kale, chopped
1 cup chickpeas, rinsed and drained
1 cup roasted sweet potatoes, cubed
Olive oil for cooking
For the Herby Yogurt Sauce:
1/2 cup Greek yogurt
1 tbsp lemon juice
2 tbsp chopped parsley
1 tbsp chopped dill
Salt and pepper to taste
Optional: 1 clove garlic, minced
Instructions
- In a large bowl, mix ground chicken with onion, garlic, herbs, egg, breadcrumbs, and seasonings.
- Form the mixture into 1-1.5 inch meatballs.
- Heat oil in a skillet over medium heat, cook meatballs in batches until golden and cooked through (165°F internal temp).
- Roast cubed sweet potatoes at 400°F (200°C) for 25-30 minutes with olive oil and spices.
- Sauté kale with a bit of olive oil until just wilted.
- Heat chickpeas in a skillet with oil, salt, and pepper until slightly toasted.
- Mix yogurt sauce ingredients in a bowl until smooth.
- Assemble bowl: kale base, top with sweet potatoes, chickpeas, meatballs, and a drizzle of yogurt sauce.
