Ingredients

6 large eggs

1/2 cup milk

1 tablespoon olive oil or butter

1/2 pound lean ground turkey, chicken sausage, or ground beef

1/2 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

1 cup canned black beans, drained and rinsed

1/2 cup frozen or canned corn (optional)

1/2 cup diced tomatoes

1/2 cup shredded cheddar or Mexican blend cheese

1/4 cup chopped fresh cilantro

4 large flour tortillas

Optional: diced avocado, salsa, Greek yogurt, lime wedges


Instructions

  1. Cook the protein: Heat oil in a skillet over medium heat. Add your chosen meat, season with cumin, chili powder, salt, and pepper. Cook until browned. Set aside.
