Ingredients
120 g low fat cottage cheese
1 large egg
30 g chocolate protein powder
20 g oat flour
15 g unsweetened cocoa powder
30 g granulated sweetener of choice
2 tablespoons milk of choice
1/4 teaspoon baking powder
1/8 teaspoon fine sea salt
1/2 teaspoon vanilla extract
2 tablespoons mini chocolate chips
Instructions
1. Lightly grease two small microwave-safe ramekins or one large mug and set aside.
2. In a small blender or with an immersion blender, blend the cottage cheese, egg, milk, vanilla, and sweetener until completely smooth and creamy.
3. Pour the blended mixture into a bowl and whisk in the chocolate protein powder, oat flour, cocoa powder, baking powder, and salt until a thick, smooth batter forms.
