Ingredients

6 large eggs

1/2 cup cottage cheese

1/4 cup milk or almond milk

1/2 cup chopped spinach

1/4 cup crumbled feta cheese

1/4 cup sun-dried tomatoes, chopped

Salt and black pepper to taste

Olive oil spray for muffin tin

Optional Add-ins:

Diced turkey bacon or chicken sausage

Chopped bell peppers or onions

Shredded cheddar or mozzarella

Red pepper flakes for heat


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin or use silicone liners.
  2. Blend eggs, cottage cheese, and milk until smooth and frothy.
  3. Pour the mixture into a bowl and stir in spinach, feta, and sun-dried tomatoes. Season with salt and pepper.
  4. Fold in any optional ingredients if desired.
  5. Divide mixture evenly among muffin cups, filling 3/4 full.
  6. Bake for 20–25 minutes, until set and golden on top.
  7. Let cool for 5 minutes before removing. Serve warm or store for later.
