Ingredients
1 1/2 cups liquid egg whites
1 cup cottage cheese
1 cup baby spinach, finely chopped
1/2 cup red bell pepper, finely diced
1/2 cup shredded mozzarella cheese
2 green onions, thinly sliced
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking spray, for greasing the pan
Instructions
1. Preheat the oven to 350°F and generously grease a 12-cup muffin pan with cooking spray.
2. Add the egg whites, cottage cheese, garlic powder, onion powder, salt, and black pepper to a blender. Blend until smooth and slightly frothy.
3. Finely chop the spinach, dice the red bell pepper, and slice the green onions.
4. Divide the spinach, red bell pepper, green onions, and shredded mozzarella evenly among the muffin cups.
5. Pour the blended egg white mixture into each muffin cup, filling each about three-quarters full.
6. Bake for 22 to 25 minutes, or until the centers are set and the tops are lightly golden.
7. Let the egg bites cool in the pan for 5 minutes, then gently loosen and remove them.

Notes
