Ingredients

1 cup cottage cheese

2 large eggs

2 tablespoons lemon juice

1 tablespoon lemon zest

3 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1/3 cup oat flour (or almond flour)

1 teaspoon baking powder

1 cup blueberries (divided)


Instructions

1. Preheat your oven to 350°F (175°C) and line or grease an 8×8 baking dish.

2. In a blender or food processor, blend cottage cheese, eggs, lemon juice, zest, maple syrup, and vanilla until smooth.

3. Pour into a bowl and mix in oat flour and baking powder until just combined.

4. Fold in half the blueberries and pour the batter into the dish.

5. Top with remaining blueberries and bake for 35–40 minutes, or until golden and a toothpick comes out mostly clean.

6. Let cool 10 minutes before slicing and serving.

Notes

For smoother texture, blend cottage cheese fully before mixing with other ingredients.

Use fresh blueberries for best texture, but frozen berries work—just don’t thaw them first.
