Ingredients

4 large egg whites

1 cup granulated sugar

1/4 teaspoon cream of tartar

1 teaspoon vanilla extract

Green gel food coloring as needed

1 cup heavy whipping cream

2 tablespoons powdered sugar

1/2 cup fresh cranberries

1/2 cup raspberries or red currants

Small rosemary sprigs or mint leaves for garnish

Extra powdered sugar for dusting


Instructions

1. Preheat the oven to 225°F and line a baking sheet with parchment paper.

2. In a clean mixing bowl, beat the egg whites until foamy, then add the cream of tartar.

3. Gradually add the granulated sugar while beating until stiff, glossy peaks form.

4. Mix in the vanilla extract and a small amount of green gel food coloring until evenly tinted.

5. Transfer the meringue to a piping bag fitted with a star tip and pipe wreath shapes onto the prepared baking sheet.

6. Bake for 1 hour, then turn off the oven and let the meringues cool inside with the door slightly open for 1 hour.

7. Beat the heavy whipping cream with the powdered sugar until soft peaks form.

8. Top each cooled wreath with whipped cream, cranberries, raspberries or red currants, and tiny rosemary sprigs or mint leaves.

9. Dust lightly with powdered sugar before serving.

Notes

Use a spotless bowl and beaters so the egg whites whip properly and reach full volume.

Assemble the whipped cream and berry topping just before serving to keep the meringues crisp.
