Description

Homemade Buttery Roasted Potatoes are the kind of side dish that instantly makes dinner feel better. Ingredients

2 pounds Yukon gold potatoes

4 tablespoons unsalted butter, melted

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Preheat the oven to 425°F and line a large baking sheet with parchment paper if desired.

2. Wash and dry the potatoes, then cut them into evenly sized chunks.

3. In a small bowl, stir together the melted butter, olive oil, garlic powder, onion powder, paprika, salt, and black pepper.

4. Place the potatoes in a large bowl and pour the butter mixture over them. Toss until evenly coated.

5. Spread the potatoes in a single layer on the prepared baking sheet, leaving space between the pieces.

6. Roast for 35 to 45 minutes, flipping halfway through, until the potatoes are golden brown and fork-tender.

7. Sprinkle with chopped parsley and serve hot.

Notes

For extra crisp edges, do not overcrowd the pan and make sure the potatoes are arranged in a single layer.

If you want even deeper flavor, toss the hot roasted potatoes with a little extra melted butter right before serving.
