Ingredients

4 cups chicken broth

1.5 pounds bone-in chicken thighs (or whole chicken)

1 cup sliced carrots

1 cup chopped celery

1 medium onion, diced

3 cloves garlic, minced

2 bay leaves

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

2 cups flat dumplings (homemade or store-bought)

2 tablespoons chopped fresh parsley


Instructions

1. In a large Dutch oven, add chicken, carrots, celery, onion, garlic, thyme, bay leaves, and chicken broth. Bring to a boil.

2. Reduce heat and simmer for 45 minutes, or until the chicken is tender.

3. Remove chicken from pot and shred with forks, discarding bones and skin. Return meat to pot.

4. Bring broth to a simmer again and stir in the flat dumplings. Cook for 15-20 minutes or until dumplings are tender.

5. Season with salt and pepper to taste.

6. Add chopped parsley just before serving for a fresh finish.

Notes

For richer flavor, use homemade chicken stock or add a splash of cream at the end.

Dumplings can be made ahead and frozen; just add them directly into the simmering broth.
