Ingredients

2 cups old-fashioned rolled oats

1/3 cup maple syrup

1/4 cup melted coconut oil

1/4 cup cocoa powder

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup roasted peanuts

1/3 cup dark chocolate chunks


Instructions

1. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

2. In a small saucepan, warm maple syrup, coconut oil, cocoa powder, and vanilla over low heat. Stir until combined.

3. In a large bowl, mix oats and sea salt. Pour chocolate mixture over oats and stir well.

4. Spread mixture on the baking sheet in an even layer.

5. Bake for 25–30 minutes, stirring halfway through. Granola should be dry and fragrant.

6. Let cool completely. Stir in peanuts and chocolate chunks.

7. Store in an airtight jar or container for up to two weeks.

Notes

For chunky granola, press the mixture down firmly on the baking sheet before baking and avoid stirring too much.

Add chocolate after cooling to prevent melting and clumping.
