Ingredients

1 pound ground beef

4 cups Yukon Gold potatoes, thinly sliced

1 ½ cups shredded cheddar cheese

1 medium onion, chopped

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

½ cup milk

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons chopped fresh parsley (for garnish)


Instructions

1. In a large skillet over medium-high heat, cook the ground beef with chopped onions and garlic until browned. Drain excess grease and season with salt, pepper, and paprika.

2. In a bowl, mix cream of mushroom soup with milk until smooth. Add additional seasoning if desired.

3. Grease a 9×13-inch baking dish. Layer sliced potatoes, then beef mixture, then cheese. Pour a portion of the soup mixture over. Repeat layers, ending with cheese.

4. Cover with foil and bake at 375°F (190°C) for 45 minutes. Remove foil and bake another 15-20 minutes until the cheese is golden and bubbling.

5. Let casserole rest for 10 minutes. Sprinkle chopped parsley on top before serving.

Notes

For faster prep, slice the potatoes using a mandoline for even, thin layers.

To freeze before baking, assemble everything in a foil tray and tightly wrap before storing.
