Ingredients
4 cups broccoli florets
1 cup orzo pasta
1 tablespoon olive oil
3 cloves garlic, minced
1 medium yellow onion, finely chopped
6 cups vegetable or chicken broth
1 cup freshly grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent, about 4–5 minutes.
2. Add minced garlic and cook for 30 seconds until fragrant.
3. Add broccoli florets and broth. Bring to a boil, then reduce heat and simmer for 10 minutes until broccoli is tender.
