Ingredients
1 large sweet onion
1 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon baking powder
1 cup chilled sparkling water
1 egg
1 teaspoon salt
1/2 teaspoon black pepper
3 cups vegetable oil (for frying)
Instructions
1. Peel and slice onion into 1/2-inch thick rings. Separate and set aside the large ones.
2. In one bowl, mix 1/2 cup flour with salt and pepper for dredging.
3. In another bowl, whisk remaining 1/2 cup flour, cornstarch, baking powder, egg, and sparkling water until smooth.
4. Heat oil in a pot to 350°F (175°C).
5. Dredge each onion ring in flour, dip into batter, and shake off excess.
6. Optionally dredge in flour again for extra crisp.
7. Fry in batches for 2–3 minutes per side, until golden.
8. Drain on paper towels and season with a pinch of salt.
9. Serve immediately with your favorite dipping sauce.
