1.5 lbs pork belly slices, skinless

3 tablespoons honey

3 tablespoons soy sauce (regular or low-sodium)

2 tablespoons rice vinegar or apple cider vinegar

1 tablespoon sesame oil

4 cloves garlic, minced

1 tablespoon grated fresh ginger (optional)

1 tablespoon hoisin sauce (optional)

Freshly ground black pepper, to taste

2 green onions, thinly sliced (for garnish)

Chopped parsley or cilantro (optional garnish)

Cooked jasmine rice (for serving)

Sautéed mushrooms and bok choy (optional sides)


Instructions

  1. Whisk together honey, soy sauce, vinegar, sesame oil, garlic, ginger, and hoisin sauce in a bowl.
  2. Add pork belly slices to a dish or bag, pour marinade over, and coat well.
  3. Cover and marinate in the fridge for at least 1 hour or overnight.
  4. Preheat oven to 400°F (200°C). Line a tray and set a wire rack on top.
  5. Place pork on the rack, reserving marinade.
  6. Roast 25 minutes, then brush with marinade, flip, and roast another 20-25 minutes.
  7. Let rest 5 minutes. Serve over rice with sauce drizzled. Garnish as desired.
