Ingredients
1 1/2 lbs chicken breast or thighs, diced
Salt and black pepper, to taste
2 tbsp cornstarch
2 tbsp olive oil
1 avocado, diced
2 cups cooked jasmine or basmati rice
2 green onions, sliced thin
For the Hot Honey Sauce:
1/4 cup honey
1–2 tbsp hot sauce (adjust to taste)
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp garlic powder
1 tsp smoked paprika
Red pepper flakes (optional)
Instructions
- Season chicken pieces with salt and pepper, then coat in cornstarch.
- Heat oil in a skillet over medium-high heat. Cook chicken in batches until golden and cooked through. Set aside.
- In the same skillet, add honey, hot sauce, soy sauce, rice vinegar, garlic powder, and smoked paprika. Simmer 2–3 minutes.
- Return chicken to the skillet and coat evenly in the sauce. Let it simmer for 1 minute.
- Assemble bowls: rice, hot honey chicken, diced avocado, and green onions. Add red pepper flakes if desired.
