1 lb chicken breast or thighs, cut into bite-sized pieces
12 oz andouille sausage, sliced
1 tbsp olive oil
1 small onion, diced
1 green bell pepper, diced
2 celery stalks, chopped
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 cup long grain rice (uncooked)
2 cups chicken broth
1 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp cayenne pepper (adjust to heat preference)
Salt and black pepper to taste
2 green onions, sliced (for garnish)
Instructions
- Set the Instant Pot to Sauté mode. Add olive oil.
- Sear sausage slices until browned (2–3 min), then remove and set aside.
