Ingredients

90g graham cracker crumbs

45g unsalted butter, melted

225g cream cheese, softened

75g granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup apples, peeled and diced

2 tablespoons brown sugar

0.5 teaspoon cinnamon

30g old-fashioned oats

15g all-purpose flour

2 tablespoons brown sugar (for topping)

2 tablespoons unsalted butter, melted (for topping)

Pinch of salt


Instructions

1. Preheat oven to 325°F (163°C) and line a muffin tin with 12 paper liners.

2. Mix graham cracker crumbs with melted butter. Press into liners to form crusts.

3. Beat cream cheese until smooth. Add sugar, egg, and vanilla. Mix until creamy.

4. Spoon cheesecake mixture into crusts, filling about 2/3 full.

5. Toss diced apples with brown sugar and cinnamon. Add a spoonful over each cheesecake.

6. In a bowl, mix oats, flour, brown sugar, cinnamon, melted butter, and salt to make crumble.

7. Sprinkle crumble topping over each mini cheesecake.

8. Bake for 25–28 minutes until centers are just set.

9. Cool in the pan 10 minutes, then refrigerate for 2+ hours before serving.

Notes
