Ingredients

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

3 ripe bananas, mashed

3/4 cup light brown sugar, packed

2 large eggs

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1/4 cup milk

2 tablespoons coarse sugar, for topping


Instructions

1. Preheat the oven to 375°F and line a 12-cup muffin tin with paper liners.

2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.

3. In a large bowl, mash the bananas until mostly smooth.

4. Add the brown sugar, eggs, melted butter, vanilla extract, and milk to the bananas, then stir until well combined.

5. Add the dry ingredients to the wet ingredients and mix gently just until no dry streaks remain.

6. Divide the batter evenly between the muffin cups, filling each about 3/4 full.

7. Sprinkle the tops with coarse sugar.

8. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.

9. Cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling.

Notes

Use very ripe bananas with plenty of brown spots for the best sweetness and strongest banana flavor.

Do not overmix the batter or the muffins can turn dense instead of soft and tender.
