Ingredients
1 (3 lb) chuck roast
1 medium onion, chopped
3 cloves garlic, minced
1 cup beef broth
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
12 corn tortillas
2 cups red enchilada sauce
2 cups shredded Monterey Jack cheese
1 cup shredded cheddar cheese
Instructions
1. Place chuck roast in a slow cooker with onion, garlic, beef broth, chili powder, cumin, and oregano.
2. Cook on low for 8 hours until meat is tender.
3. Shred the beef with two forks, removing excess fat.
4. Mix shredded beef with 1/2 cup enchilada sauce and a small amount of shredded cheese.
5. Warm tortillas to soften, then fill with beef mixture and roll tightly.
6. Place rolled tortillas seam-side down in a greased baking dish.
7. Pour remaining enchilada sauce over the top.
