Ingredients

3 ripe bananas

1 3/4 cups all-purpose flour

1/2 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1/2 cup unsalted butter, melted

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons cinnamon sugar (for swirl + topping)

1/2 cup chopped walnuts or pecans

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan. Line with parchment paper.

2. Mash bananas in a large bowl until smooth.

3. Stir in melted butter, eggs, sugars, and vanilla extract until fully combined.

4. In another bowl, whisk flour, baking soda, salt, and cinnamon.

5. Mix dry ingredients into wet ingredients just until combined.

6. Fold in chopped nuts.

7. Pour half the batter into the loaf pan, add a layer of cinnamon sugar, then add remaining batter. Swirl the top with more cinnamon sugar.

8. Bake for 55–65 minutes or until a toothpick comes out clean.

9. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

For best flavor, use bananas that are heavily spotted or completely brown.
