Description

Ingredients

12 ounces egg noodles

1 pound Italian sausage

2 bell peppers, sliced

1 large onion, sliced

3 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

1/2 cup red or white wine

2 tablespoons olive oil

1 teaspoon red pepper flakes (optional)

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1/2 cup Parmesan cheese, grated

Salt and black pepper to taste


Instructions

1. Bring a pot of salted water to a boil and cook noodles until al dente. Drain and set aside.

2. Heat olive oil in a large skillet. Cook sausage until browned, then remove and set aside.

3. In the same skillet, sauté onions and bell peppers until softened. Add garlic and red pepper flakes.

4. Deglaze with wine, scraping up browned bits. Let reduce slightly.

5. Add crushed tomatoes and return sausage to skillet. Simmer 10–15 minutes.

6. Season with salt and pepper. Add cooked noodles and toss to coat.

7. Stir in basil and parsley. Serve hot, topped with Parmesan cheese.

Notes

Use red wine for a deeper flavor or white wine for a lighter, fresher sauce.

Add extra veggies like zucchini or mushrooms for even more richness.
