4 cups chicken or vegetable broth
3/4 cup pastina (or acini di pepe, orzo, etc.)
1 tablespoon unsalted butter
2 cloves garlic, minced
1/2 cup finely diced or shredded carrot
1 large egg (optional)
1/3 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley
Salt to taste
Black pepper to taste
Instructions
1. Melt butter in a large saucepan over medium heat. Add garlic and carrots. Cook for 3-4 minutes until fragrant.
2. Pour in broth and bring to a gentle boil. Simmer for 5 minutes.
3. Stir in pastina and cook uncovered for 7-8 minutes, stirring often.
4. If using egg, beat it and drizzle slowly into the soup while stirring to form ribbons.
5. Remove from heat. Stir in Parmesan cheese. Adjust salt and pepper.
