Ingredients
1 lb Italian sausage (mild or spicy)
1 medium onion, diced
2 carrots, chopped
2 celery stalks, chopped
4 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
4 cups chicken broth
1 cup small pasta (like ditalini or rotini)
3 cups kale, chopped
Salt and pepper, to taste
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
Instructions
- Brown the sausage in a large pot over medium heat, breaking it up as it cooks. Drain any excess fat.
- Add the chopped onion, carrots, and celery to the pot and cook for 5 minutes until softened.
- Add the garlic and cook for an additional 1-2 minutes.
- Pour in the chicken broth and diced tomatoes, scraping up any browned bits from the bottom of the pot. Bring the soup to a simmer.
- Add the pasta and cook for 10-12 minutes until the pasta is tender.
- Stir in the chopped kale and simmer for another 2-3 minutes until wilted.
