Ingredients
1/2 cup (1 stick) butter, softened
1 cup peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and peanut butter until smooth.
- Add the granulated sugar and brown sugar, beating until light and fluffy.
- Mix in the egg and vanilla extract until fully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Roll tablespoon-sized portions of dough into balls and place them on the baking sheet.
- Use a fork to create a crisscross pattern by pressing gently into each dough ball.
- Bake for 10-12 minutes, until the edges are lightly golden.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack
