Ingredients

1/2 cup (1 stick) butter, softened

1 cup peanut butter

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and peanut butter until smooth.
  3. Add the granulated sugar and brown sugar, beating until light and fluffy.
  4. Mix in the egg and vanilla extract until fully combined.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Roll tablespoon-sized portions of dough into balls and place them on the baking sheet.
  8. Use a fork to create a crisscross pattern by pressing gently into each dough ball.
  9. Bake for 10-12 minutes, until the edges are lightly golden.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack
