Ingredients
3 fillets salmon, skinless
1 cup Greek yogurt
2 tablespoons fresh dill, chopped
1 clove garlic, minced
2 tablespoons lemon juice
1 tablespoon olive oil
1 cup cucumber, diced
1/4 cup red onion, diced
4 pita breads
Instructions
1. In a bowl, mix Greek yogurt, dill, garlic, lemon juice, salt, and olive oil. Chill for 15 minutes.
2. Reserve half of the sauce. Use the rest to coat salmon and marinate for 20–30 minutes.
3. Preheat grill and lightly oil grates. Grill salmon 3–4 minutes per side until cooked.
4. Warm pita in a skillet or low oven.
5. Spread yogurt sauce on pita. Add grilled salmon, cucumbers, onions, and extra dill. Serve immediately.
Notes
Use fresh dill for the best flavor—dried just doesn’t compare here.
Don’t overcook the salmon—aim for a juicy center with crisp edges.
