Ingredients
1 lb kielbasa sausage, sliced into ½-inch rounds
4 cups peeled and diced Yukon Gold or russet potatoes
2 cups shredded cheddar cheese (mild or sharp)
1 cup sour cream
1/2 cup milk
1/4 cup unsalted butter, melted
1 small onion, finely chopped
2 cloves garlic, minced
1/2 tsp paprika
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Brown kielbasa slices in a skillet over medium heat for 5-7 minutes. Set aside.
- Sauté onion and garlic in the same skillet until soft and fragrant.
- In a large bowl, combine sour cream, milk, butter, paprika, salt, and pepper. Stir in half the cheese.
- Add potatoes, sautéed onion and garlic, and half the kielbasa. Mix well.
- Transfer to baking dish. Top with remaining kielbasa and cheese.
- Cover with foil and bake 45 minutes. Uncover and bake another 15-20 minutes until bubbly and golden.
- Let rest 5-10 minutes. Garnish with parsley and serve.
