Ingredients

1 lb kielbasa sausage, sliced into ½-inch rounds

4 cups peeled and diced Yukon Gold or russet potatoes

2 cups shredded cheddar cheese (mild or sharp)

1 cup sour cream

1/2 cup milk

1/4 cup unsalted butter, melted

1 small onion, finely chopped

2 cloves garlic, minced

1/2 tsp paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Brown kielbasa slices in a skillet over medium heat for 5-7 minutes. Set aside.
  3. Sauté onion and garlic in the same skillet until soft and fragrant.
  4. In a large bowl, combine sour cream, milk, butter, paprika, salt, and pepper. Stir in half the cheese.
  5. Add potatoes, sautéed onion and garlic, and half the kielbasa. Mix well.
  6. Transfer to baking dish. Top with remaining kielbasa and cheese.
  7. Cover with foil and bake 45 minutes. Uncover and bake another 15-20 minutes until bubbly and golden.
  8. Let rest 5-10 minutes. Garnish with parsley and serve.
