Description

Ingredients

For the Beef:

1 lb beef (ribeye or flank steak), thinly sliced

1/4 cup soy sauce

2 tbsp brown sugar

1 tbsp sesame oil

3 cloves garlic, minced

1 tsp grated ginger

1 tbsp gochujang (Korean chili paste)

1 tbsp rice vinegar

1 tbsp honey

1/2 tsp black pepper

For the Corn:

1 1/2 cups corn kernels (fresh or frozen)

1 tbsp butter

1/2 tsp paprika

1/2 tsp garlic powder

Salt and pepper to taste

For the Creamy Sauce:

1/2 cup mayonnaise

2 tbsp sour cream

1 tbsp lemon juice

1/2 tsp black pepper

1/2 tsp garlic powder

1 tbsp chopped parsley

Additional Toppings:

1 cup cooked rice (white or brown)

Chopped parsley or green onions for garnish


Instructions

Marinate the Beef

In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, gochujang, rice vinegar, honey, and black pepper. Mix well and add the thinly sliced beef, ensuring it is evenly coated. Marinate for at least 30 minutes or up to 4 hours for maximum flavor.

2. Cook the Beef

Heat a pan or grill over medium-high heat and add a little oil. Cook the marinated beef in a single layer, letting it caramelize before flipping, about 2-3 minutes per side. Remove from heat and set aside.

3. Sauté the Corn

In the same pan, melt butter over medium heat. Add corn kernels and season with paprika, garlic powder, salt, and pepper. Sauté for about 5 minutes, stirring occasionally, until golden and slightly crispy. Set aside.

4. Prepare the Creamy Sauce

In a small bowl, whisk together mayonnaise, sour cream, lemon juice, black pepper, garlic powder, and chopped parsley. Adjust seasoning as needed.

5. Assemble the Bowl

Start with a base of warm cooked rice. Add the grilled Korean BBQ beef and sautéed corn. Drizzle generously with the creamy sauce and garnish with chopped parsley or green onions. Serve immediately and enjoy!
