Ingredients
1 pound ground beef
3 tablespoons soy sauce
2 tablespoons brown sugar
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 tablespoon gochujang or sriracha
3 cups cooked white rice
1 cucumber, thinly sliced
2 eggs
2 green onions, chopped
1 teaspoon sesame seeds
Instructions
1. Heat a large skillet over medium-high heat. Add the ground beef and cook, crumbling it until browned and cooked through.
2. Stir in the soy sauce, brown sugar, garlic, ginger, and gochujang or sriracha. Simmer for 2–3 minutes until sauce thickens.
3. In a separate skillet, cook eggs to your preference (sunny-side-up recommended).
4. To serve, divide the cooked rice into bowls.
5. Top with the beef mixture, cucumber slices, and egg.
6. Garnish with green onions and sesame seeds. Serve immediately.
Notes
Swap white rice for brown rice or cauliflower rice for a healthier twist.
Store the beef separately from the cucumbers and egg if meal prepping.
