Ingredients
180 grams graham cracker crumbs
90 grams unsalted butter, melted
680 grams full-fat cream cheese, softened
200 grams granulated sugar
1 tablespoon vanilla extract
240 ml heavy cream
200 grams fresh strawberries, sliced
120 ml strawberry jam or sauce
240 ml whipped cream, for piping
1 tablespoon unflavored gelatin (optional)
2 tablespoons warm water (for dissolving gelatin)
Instructions
1. Preheat oven to 325°F. Mix graham cracker crumbs with melted butter until well blended. Press into the base of a springform pan and bake for 10 minutes. Cool completely.
2. Beat softened cream cheese and sugar in a large bowl until smooth. Add vanilla extract and heavy cream. Mix until fluffy.
3. (Optional) Dissolve gelatin in warm water and stir into the cream cheese mixture to help it set.
4. Pour half the mixture onto the crust. Swirl in half of the strawberry jam and add a layer of fresh strawberry slices.
5. Add the rest of the filling, swirl again with the remaining jam. Chill in the fridge for at least 6 hours or overnight.
6. Once fully set, pipe whipped cream on top and decorate with whole glazed strawberries. Drizzle strawberry sauce down the sides.
7. Slice with a warm knife and serve chilled.
Notes
For cleaner swirls, use a toothpick or skewer and don’t overmix.
