Ingredients
1.5 pounds chicken breasts
1 cup long-grain white rice
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of chicken soup
1 1/2 cups chicken broth
1 packet onion soup mix
2 tablespoons butter (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. In a bowl, mix the cream of mushroom soup, cream of chicken soup, chicken broth, and uncooked rice.
3. Pour the mixture evenly into the prepared dish.
4. Place chicken breasts on top of the rice and press in slightly.
5. Sprinkle the onion soup mix evenly over the chicken. Add butter slices if desired.
6. Cover with foil and bake for 1 hour.
7. Remove foil and bake another 15–20 minutes, until chicken is cooked and rice is tender.
8. Let rest 5–10 minutes before serving.
Notes
For richer flavor, use a mix of chicken thighs and breasts.
Add a handful of shredded cheddar on top for a cheesy version.
