Ingredients
1 cup all-purpose flour
1/4 cup granulated sugar
1/2 cup melted unsalted butter
2 large eggs
3/4 cup granulated sugar
2 tablespoons all-purpose flour
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1 cup blueberries (fresh or frozen)
powdered sugar for dusting
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
2. Mix 1 cup flour, 1/4 cup sugar, and 1/2 cup melted butter until crumbly. Press into pan.
3. Bake crust for 15–18 minutes or until lightly golden.
4. In a bowl, whisk together eggs, 3/4 cup sugar, 2 tablespoons flour, lemon juice, and zest until smooth.
5. Fold in blueberries gently.
6. Pour filling over the warm crust once it comes out of the oven.
7. Bake again for 22–25 minutes until the center is just set.
8. Let cool completely, refrigerate for 1 hour, then slice.
9. Dust with powdered sugar before serving.
