Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking powder

¼ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

½ cup Greek yogurt or sour cream

1 tablespoon lemon zest

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

4 ounces cream cheese, softened

3 tablespoons powdered sugar

⅓ cup lemon curd


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan; line with parchment paper.

2. In a large bowl, cream butter and sugar until light and fluffy.

3. Add eggs one at a time. Mix in yogurt, lemon zest, juice, and vanilla.

4. In another bowl, whisk flour, baking powder, baking soda, and salt.

5. Gradually add dry ingredients to the wet mixture. Mix until just combined.

6. In a separate bowl, beat cream cheese with powdered sugar until smooth.

7. Pour half the batter into the loaf pan. Add half the cream cheese and dollops of lemon curd. Swirl lightly.

8. Repeat with remaining batter, cream cheese, and curd. Swirl again.

9. Bake 50–60 minutes or until a toothpick (avoiding the cream cheese) comes out clean. Tent with foil if browning too fast.

10. Cool 10 minutes in pan, then transfer to a wire rack to cool completely before slicing.

Notes

Bring cream cheese to room temperature for smooth blending.

For extra tang, drizzle a lemon glaze over the cooled loaf.
