Ingredients
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
1 1/4 cups granulated sugar (plus more for rolling)
1 large egg
1 tablespoon lemon zest (from 1–2 lemons)
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
Instructions
- Whisk together flour, baking soda, and salt in a bowl.
- In a separate bowl, cream softened butter and sugar until fluffy.
- Mix in egg, lemon zest, lemon juice, and vanilla until combined.
- Gradually add dry ingredients and mix until just combined.
- Cover and chill dough for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line baking sheet with parchment paper.
- Roll tablespoon-sized dough balls in sugar and place on baking sheet.
- Bake 10-12 minutes until edges are lightly golden.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack.
