Ingredients

2 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, softened

1 1/4 cups granulated sugar (plus more for rolling)

1 large egg

1 tablespoon lemon zest (from 12 lemons)

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract


Instructions

  1. Whisk together flour, baking soda, and salt in a bowl.
  2. In a separate bowl, cream softened butter and sugar until fluffy.
  3. Mix in egg, lemon zest, lemon juice, and vanilla until combined.
  4. Gradually add dry ingredients and mix until just combined.
  5. Cover and chill dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheet with parchment paper.
  7. Roll tablespoon-sized dough balls in sugar and place on baking sheet.
  8. Bake 10-12 minutes until edges are lightly golden.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
