Ingredients

1 tablespoon olive oil

1 small yellow onion, diced

2 medium carrots, diced

2 celery stalks, diced

3 garlic cloves, minced

1 pound boneless skinless chicken thighs

6 cups chicken broth

3/4 cup orzo pasta

1/4 cup fresh lemon juice (about 2 lemons)

1/4 cup heavy cream (optional)

1/4 cup fresh dill, chopped

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5–7 minutes until softened.

2. Add garlic and cook for 30 seconds until fragrant.

3. Place chicken thighs in the pot. Season with salt and pepper. Pour in chicken broth and bring to a simmer.

4. Cover and cook for 15–20 minutes until chicken is cooked through. Remove, shred with forks, and return to the pot.

5. Add orzo and cook uncovered for 8–10 minutes, stirring occasionally.

6. Stir in lemon juice and heavy cream. Adjust seasoning with salt and pepper.

7. Remove from heat. Sprinkle with fresh dill and serve hot.

Notes

You can replace orzo with cooked rice or couscous if needed—adjust cooking time accordingly.

If storing leftovers, thin the soup with extra broth or water when reheating since orzo will absorb more liquid.
