Ingredients

4 large russet potatoes, peeled and diced

4 cups chicken broth

1 cup whole milk

1 cup heavy cream

1 cup sharp cheddar cheese, shredded

6 slices bacon, cooked and crumbled

2 tablespoons unsalted butter

1 small yellow onion, diced

3 cloves garlic, minced

2 tablespoons all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup chopped chives or green onions, for garnish


Instructions

1. In a large pot, cook the bacon until crispy. Remove and set aside on a paper towel. Leave about 2 tablespoons of bacon grease in the pot.

2. Add the butter and diced onion. Sauté over medium heat until the onion is soft and translucent. Add minced garlic and cook for 30 seconds.

3. Stir in the flour and cook for 1-2 minutes to create a roux. Slowly whisk in the chicken broth, then add milk and cream.

4. Add the diced potatoes to the pot. Bring to a simmer and cook uncovered for 20 minutes, or until the potatoes are tender.

5. Mash some of the potatoes with a masher for a chunky texture, or use an immersion blender for a smoother consistency.

6. Stir in the shredded cheese until melted and creamy. Season with salt and pepper to taste.

7. Serve hot with crispy bacon, more cheese, and chopped chives on top.

Notes

For extra depth, add a pinch of smoked paprika or a dash of hot sauce.

You can make it vegetarian by omitting the bacon and using vegetable broth.
