Ingredients

2 boneless, skinless chicken breasts

1 cup freshly grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2 eggs, beaten

2 tablespoons butter

2 tablespoons olive oil

1 cup heavy cream

2 cloves garlic, minced

1/2 cup chicken broth

1/2 cup shredded mozzarella (optional)

Fresh parsley, chopped (for garnish)


Instructions

  1. Prepare the Chicken: Pound chicken breasts to an even thickness and season with salt, pepper, and garlic powder.
  2. Bread the Chicken: Dip each chicken breast in beaten eggs, then coat with a mixture of panko and grated Parmesan. Press gently to adhere.
  3. Cook the Chicken: Heat butter and olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden brown and crispy. Remove and set aside.
  4. Make the Sauce: In the same skillet, sauté garlic for 30 seconds. Add chicken broth and let it simmer for 1 minute. Stir in heavy cream and Parmesan cheese, letting the sauce thicken. Optionally, add mozzarella for extra cheesiness.
  5. Combine and Serve: Return chicken to the pan, spoon sauce over the top, and let it simmer for 1-2 minutes. Garnish with fresh parsley and serve hot.
