Ingredients
1 cup warm milk
1/2 cup sugar
2 1/4 tsp active dry yeast
4 cups all-purpose flour
1 tsp salt
1/2 cup unsalted butter, softened
2 large eggs
Zest of 1 lemon
1/2 cup butter, softened (for filling)
1/2 cup sugar (for filling)
Zest of 1 lemon (for filling)
1 1/2 cups powdered sugar (for glaze)
2–3 tbsp fresh lemon juice (for glaze)
Pinch of salt (for glaze)
Instructions
- Prepare the Dough: Activate the yeast by combining warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy. In the bowl of a stand mixer, combine the flour, salt, butter, eggs, and lemon zest. Add the yeast mixture and mix on low until combined. Knead for 5-7 minutes on medium speed until smooth and elastic. Let rise for 1-1.5 hours in a warm spot.
- Roll and Fill the Dough: Punch down the dough and turn it out onto a floured surface. Roll it into a 12×18-inch rectangle. Spread softened butter over the dough, then sprinkle with sugar and lemon zest. Roll the dough up tightly from the long side and slice into 12-15 rolls.
- Let the Rolls Rise Again: Place the sliced rolls into a greased baking dish, ensuring they’re close together. Cover and let rise for another 30-60 minutes.
- Bake the Rolls: Preheat the oven to 350°F (175°C). Bake for 20-25 minutes until golden brown on top and fully cooked. Remove from the oven.
- Glaze and Serve: While the rolls bake, prepare the glaze by mixing powdered sugar, lemon juice, and salt. Once the rolls are done, cool for about 10 minutes before brushing with the glaze. Serve warm.
