Ingredients
4 lamb chops (rib or loin)
3 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon lemon zest
3 garlic cloves, minced
1 teaspoon fresh rosemary, chopped
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon crushed red pepper (optional)
1 cup mushrooms, sliced
1 cup cherry tomatoes
1 tablespoon olive oil (for cooking)
2 tablespoons fresh parsley, chopped
Instructions
1. In a bowl, mix olive oil, lemon juice, zest, garlic, rosemary, oregano, salt, pepper, and red pepper flakes. Add lamb chops and marinate for at least 1 hour.
2. Heat a skillet or grill over medium-high. Sear lamb chops for 3–4 minutes per side until golden and cooked to your liking. Set aside.
3. In the same skillet, add more olive oil. Sauté mushrooms until browned, then add tomatoes and cook until blistered. Season lightly.
4. Return lamb chops to the skillet, warm through, and spoon mushrooms and tomatoes on top.
5. Garnish with chopped parsley and a squeeze of lemon if desired. Serve hot.
