Marry Me Chicken Pasta is a creamy, flavorful dish featuring tender seared chicken in a rich garlic parmesan sauce with sun-dried tomatoes, tossed with perfectly cooked pasta. This easy, one-pan meal is perfect for date nights, family dinners, or special occasions.


Ingredients

2 boneless, skinless chicken breasts

2 cups penne pasta (or pasta of choice)

2 tablespoons olive oil

1 tablespoon butter

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional)

1/2 cup sun-dried tomatoes, chopped

1 cup chicken broth

1 cup heavy cream

1 cup freshly grated parmesan cheese

Fresh parsley or basil for garnish


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook pasta until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Sear the Chicken: Pat chicken dry and season with salt, pepper, and Italian seasoning. Heat olive oil and butter in a large skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown and cooked through. Remove and let rest before slicing.
  3. Sauté Garlic and Tomatoes: In the same skillet, sauté garlic for about 30 seconds, then add sun-dried tomatoes and cook for another minute.
  4. Make the Sauce: Reduce heat to medium and pour in chicken broth, scraping up browned bits from the pan. Stir in heavy cream and let simmer for 2-3 minutes. Add parmesan cheese and red pepper flakes, stirring until the sauce thickens.
  5. Combine Everything: Add the sliced chicken back to the pan along with the cooked pasta. Toss to coat in the creamy sauce. If needed, add reserved pasta water to adjust consistency.
  6. Serve and Garnish: Remove from heat, garnish with fresh parsley or basil, and serve immediately with extra parmesan.
