Ingredients
2 boneless, skinless chicken breasts
2 cups penne pasta (or pasta of choice)
2 tablespoons olive oil
1 tablespoon butter
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon crushed red pepper flakes (optional)
1/2 cup sun-dried tomatoes, chopped
1 cup chicken broth
1 cup heavy cream
1 cup freshly grated parmesan cheese
Fresh parsley or basil for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook pasta until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- Sear the Chicken: Pat chicken dry and season with salt, pepper, and Italian seasoning. Heat olive oil and butter in a large skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown and cooked through. Remove and let rest before slicing.
- Sauté Garlic and Tomatoes: In the same skillet, sauté garlic for about 30 seconds, then add sun-dried tomatoes and cook for another minute.
- Make the Sauce: Reduce heat to medium and pour in chicken broth, scraping up browned bits from the pan. Stir in heavy cream and let simmer for 2-3 minutes. Add parmesan cheese and red pepper flakes, stirring until the sauce thickens.
- Combine Everything: Add the sliced chicken back to the pan along with the cooked pasta. Toss to coat in the creamy sauce. If needed, add reserved pasta water to adjust consistency.
- Serve and Garnish: Remove from heat, garnish with fresh parsley or basil, and serve immediately with extra parmesan.
