Ingredients

1 medium head green cabbage

4 cloves garlic, minced

1/3 cup sun-dried tomatoes, chopped

1 tablespoon butter

1/2 cup heavy cream

1/2 cup vegetable or chicken broth

1/4 teaspoon red pepper flakes

1/2 cup grated parmesan cheese

1 tablespoon chopped fresh parsley

Salt and pepper to taste


Instructions

1. Preheat oven to 400°F and slice cabbage into thick wedges, keeping the core intact.

2. In an ovenproof skillet, melt butter and sear cabbage on both cut sides until golden. Remove and set aside.

3. Add garlic and sun-dried tomatoes to the same pan. Cook until fragrant.

4. Pour in broth and cream, stirring to combine.

5. Nestle cabbage wedges into the sauce, spoon sauce over the top.

6. Roast uncovered for 35–40 minutes until cabbage is tender and sauce has thickened.

7. Sprinkle with parmesan and parsley. Serve warm with extra sauce.

Notes

For extra depth, add a splash of white wine to the sauce before roasting.
