Ingredients

4 salmon fillets (skin-on or off)

Salt and black pepper (to taste)

1 tbsp olive oil

2 tbsp butter

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1 tsp red pepper flakes (optional)

3/4 cup heavy cream

1/2 cup chicken or vegetable broth

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

1 small bell pepper, diced (optional)

Juice of half a lemon

Fresh basil or parsley, chopped (for garnish)


Instructions

  1. Pat the salmon fillets dry and season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear salmon skin-side down for 4–5 minutes. Flip and cook for another 2–3 minutes. Remove and set aside.
  3. In the same pan, melt butter over medium heat. Add minced garlic and sauté for 30 seconds.
  4. Stir in sun-dried tomatoes and red pepper flakes. Cook for another minute.
  5. Add heavy cream and broth. Stir and bring to a gentle simmer.
  6. Mix in Parmesan and Italian seasoning. Cook until the sauce thickens slightly.
  7. Stir in bell pepper and lemon juice. Simmer for another minute.
  8. Return salmon to the pan. Spoon sauce over fillets and heat through for 2–3 minutes.
  9. Garnish with fresh herbs and serve hot.
