Ingredients

1 tablespoon olive oil

1 lb Italian sausage, casings removed or pre-cooked and sliced

1 medium yellow onion, diced

2 carrots, peeled and diced

2 celery stalks, diced

3 garlic cloves, minced

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes (optional)

6 cups chicken broth

1 (14.5 oz) can diced tomatoes, drained

3/4 cup dry orzo pasta

Salt and black pepper to taste

1/2 cup chopped fresh parsley

Grated Parmesan cheese for topping (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
  2. In the same pot, sauté onion, carrots, and celery for 5 minutes. Add garlic, oregano, and red pepper flakes; cook for 1 minute.
  3. Pour in chicken broth and diced tomatoes. Bring to a boil, then simmer for 10 minutes.
  4. Add orzo and sausage. Simmer for 10 minutes or until orzo is tender, stirring occasionally.
  5. Season with salt and pepper. Stir in parsley and serve hot, topped with Parmesan if desired.
