1 tablespoon olive oil
1 lb Italian sausage, casings removed or pre-cooked and sliced
1 medium yellow onion, diced
2 carrots, peeled and diced
2 celery stalks, diced
3 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes (optional)
6 cups chicken broth
1 (14.5 oz) can diced tomatoes, drained
3/4 cup dry orzo pasta
Salt and black pepper to taste
1/2 cup chopped fresh parsley
Grated Parmesan cheese for topping (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery for 5 minutes. Add garlic, oregano, and red pepper flakes; cook for 1 minute.
- Pour in chicken broth and diced tomatoes. Bring to a boil, then simmer for 10 minutes.
- Add orzo and sausage. Simmer for 10 minutes or until orzo is tender, stirring occasionally.
