Ingredients
3 pounds sweet potatoes, peeled and cubed
0.75 cup brown sugar
0.25 cup unsalted butter, cubed
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
0.25 teaspoon ground nutmeg
0.25 teaspoon salt
2 cups mini marshmallows
Instructions
1. Peel and cube sweet potatoes into even chunks.
2. Add sweet potatoes to a slow cooker.
3. Sprinkle with brown sugar, cinnamon, nutmeg, and salt.
4. Dot with butter cubes and drizzle vanilla over the top.
5. Cover and cook on low for 4 to 5 hours, stirring once halfway through.
6. When tender, sprinkle mini marshmallows over the top.
