Ingredients

2 cups cold mashed potatoes

1 large egg

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 tbsp chopped fresh chives (plus more for garnish)

2 tbsp all-purpose flour

1/2 tsp garlic powder

Salt and pepper to taste

Sour cream, for topping (optional)


Instructions

  1. Preheat oven to 400°F (200°C) and grease a mini muffin pan.
  2. In a bowl, mix mashed potatoes, egg, cheddar, Parmesan, chives, flour, garlic powder, salt, and pepper.
  3. Scoop mixture into muffin wells and lightly press.
  4. Bake 25–30 minutes until golden and crisp.
  5. Let cool 5 minutes before removing.
  6. Top with sour cream and extra chives, then serve warm.
