Ingredients
4 salmon fillets (skin-on, about 6 oz each)
1 cup sun-dried tomatoes (drained and chopped)
1 cup crumbled feta cheese
2 cups fresh baby spinach
1 small red onion (thinly sliced)
3 cloves garlic (minced)
1/3 cup basil pesto
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 400°F and line a baking sheet with parchment paper.
2. Place salmon fillets skin-side down and pat dry.
3. Spread 1 tablespoon of pesto over each fillet.
4. Top with spinach, sun-dried tomatoes, red onion slices, and minced garlic.
